چکیده

In this study two separate sets of data were used to develop prediction equations for Marbling Scores (MS) from actual percentage intramuscular fat. All regression parameters were significantly (P<.01) different from zero. Model-I explained only 49% of the variation in MS as compared with 83% for modelII. When these equations were validated on an independent data set, the correlations between the predicted and actual marbling scores were similar at 0.69 and 0.66 for model-I and model-II, respectively. Model-I has correctly classified 45.45%, 67.62%, 63.83%, and 42.86% of the bservations in trace, slight, small and modest classes, respectively. ModelII performed better than model-I for the extreme MS classes (practically devoid and moderate).

Comparison of four real-time ultrasound systems that predict intramuscular fat in beef cattle.

Eighty-one crossbred steers were used to evaluate four commercially available ultrasound systems that predict intramuscular fat. The software systems represented included Animal Ultrasound Services, Inc., Ithaca, NY; CPEC, Oakley, KS; Critical Vision, Inc., Atlanta, GA (CVIS); and Classic Ultrasound Equipment, Tequesta, FL. Systems were evaluated using marbling scores and percentage ether extra...

Prediction of fat percentage within marbling score on beef longissimus muscle using 3 different fat determination methods.

Consumers are concerned with fat consumption from meat products, and the ability to determine fat has changed with recent technological advances. The objective of this study was to predict fat percentage within marbling scores and compare 3 fat analysis procedures. Steaks (n = 119) were selected by USDA grading system using an E + V Vision Grading camera at a commercial beef plant during 1 d. T...

Effects of selection for ultrasound intramuscular fat percentage in Angus bulls on carcass traits of progeny.

Angus bulls (n = 20) from three pure-bred herds in Georgia were acquired to determine the impact of selecting sires based on phenotypic yearling ultrasound intramuscular fat percentage (UIMF) or UIMF EPD on marbling score of steer progeny. Each year in each herd, pairs of bulls were selected to create large differences based on their age adjusted phenotypic yearling UIMF measurements. The avera...

SOFfW ARE PACKAGE AND APPLICATION SYSTEMS IN MEAT QUALITY EVALUATION AND PREDICTION FOR LIVE ANIMALS AND CARCASSES

There are three economically important traits under the CUlTent U. S. Beef Grading System: the distribution and amount of intramuscular fat (or marbling), the subcutaneous fat thickness, and the ribeye muscle size. These traits are also major factors used in evaluating body composition for genetic improvement. The marbling scores are visually graded by certified inspectors under the current USD...

Genetics of Marbling in Wagyu Revealed by the Melting Temperature of Intramuscular and Subcutaneous Lipids

Extreme marbling or intramuscular deposition of lipid is associated with Wagyu breeds and is therefore assumed to be largely inherited. However, even within 100% full blood Wagyu prepared under standard conditions, there is unpredictable scatter of the degree of marbling. Here, we evaluate melting temperature (Tm ) of intramuscular fat as an alternative to visual scores of marbling. We show tha...
